Swiss Chard Salad

INGREDIENTS

2 packs of Hijo Fresh Swiss Chard
1 cup of breadcrumbs
1/2 cup grated Parmesan cheese
1 garlic clove, minced
1 lemon, juiced
salt and pepper to taste
optional: 1/4 teaspoon red pepper flakes

STEPS

1. Prepare the Swiss Chard by giving it a quick rinse and then separating the stems and the leaves. Chop the leaves into bite sized pieces and the stems into very small pieces for added texture.
2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Add the breadcrumbs and cook, stirring frequently, until they are golden brown and crispy. This should take about 3-5 minutes. Remove the breadcrumbs from the skillet and let them cool slightly.
3. In a large bowl, add the chopped Swiss chard leaves and stems. Drizzle the remaining olive oil and lemon juice over the chard. Season with salt and pepper to taste, and add red pepper flakes.
4. Toss the chard to coat evenly with the dressing. Add the breadcrumbs, and grated parmesan cheese to the bowl. And toss again gently to combine all the ingredients.
5. Serve immediately and enjoy!
